Bikini Recipe

Yields 10 people

For the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Cocktail (yields 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Citrus Syrup: Put every ingredients inside a saucepan, heat until it reaches a light boil, stirring so the sugar melts. After that, take off the burner and leave to cool fully. Pour into an sterilised bottle, cap it and store in the refrigerator, where it will keep for about one month.

For the Batch Mix: Combine all the spirits and syrup in a large bottle, let it rest for one hour, then filter it best through a fine cloth, making it perfectly clear.

To serve: Measure 85ml from the batch mix to a stirring glass containing ice, and stir carefully for one minute to cool it down. Pour into an chilled martini glass or similar, garnish with some cranberries and complete it using a quick spritz with the mandarin essence over the drink.
